Waikiki Meatballs

Meatballs

1 1/2 lb ground beef

2/3 saltine cracker crumbs, crunch extra fine

1/3 c onion, minced very fine

1 egg

1 1/2 t salt

1/4 t ginger

1/4 c milk

Preheat oven to 350*F. Mixm meatball ingredients together and shape into 1 – 1.5 inch balls (I like to use a cookie scoop). Arrange on lined or greased cookie sheet. Bake for 20-25 minutes until cooked through and brown/crispy on outside (you can turn on broiler for the last 3-4 minutes if you watch them closely). Place in crockpot on low or warm until ready to serve.

Sauce

2 T cornstarch

1/2 c brown sugar

1/3 c vinegar

1 T soy sauce

13.5 oz pineapple chunks (save the juice)

2 green peppers, sliced into strips

In a microwave safe bowl, mix cornstarch and sugar – stir in saved pineapple juice, vinegar and soy sauce until smooth. Cook in microwave in 2-3 minute intervals, checking and stirring until mixture thickens and boils. Pour over meatballs, pineapple and green pepper. Heat through.

Serve with rice or over chow mien noodles.
