Beef Shares

Total price customer pays to producer for beef shares is for HANGING WEIGHT.

• Hanging weight is the weight of the carcass after the hide, head, and innards have been removed. Bones and fat are included in the hanging weight.

• Packaged beef is about 50% of hanging weight (once bones and fat have been removed). This weight can vary depending on a few factors, all reducing the boxed weight but not the amount of meat: more boneless cuts requested by the customer, less surface fat left on the cuts, leaner ground beef requested by the customer.

• Because every animal varies slightly in size, exact cost isn’t determined until after each beef is butchered.

Whole Beef: approx. 800 lbs. hanging weight and approx. 400 lbs. packaged beef

Half Beef: approx. 400 lbs. hanging weight and approx. 200 lbs. packaged beef

Quarter Beef: approx. 200 lbs. hanging weight and approx. 100 lbs. packaged beef

Individual Cuts available upon request and availability.

Bulk Ground Beef and Ground Beef Patties are sold by the packaged weight, not the hanging weight.
